I remember when I found out about my intolerance to gluten.

I was worried, I wouldn’t be able to enjoy sandwiches and pasta as much as I used to. The texture of gluten-free bread and pasta is different to standard bread. However, I’ve found out that the alternatives can taste equally as good and after shopping around for gluten-free bread I finally found a brand that works for me which is great.

I love sandwiches, they are so quick and easy to make. Plus they it’s cost effective, three simple ingredients can stretch out to make a week’s worth of sandwiches!

This week I decided to have smoked salmon and mozzarella in my sandwich. I’m really trying to include more protein in my diet and I’m a huge fan of smoked fish, especially salmon. It’s full of so many nutrients such as protein and iron.  Although, you do have to eat it in moderation. You know that lovely saltiness it has to it? High levels of sodium, so that’s a bit of a drawback.

One of the highlights of this sandwich was that it stayed moist throughout the morning. Salmon and mozzarella are quite moist, so I didn’t need to drown in sauces or dressings. I’ve made sandwiches in the past which can sometimes dry up. Gluten-free bread absorbs moisture very quickly and I don’t like to put layers of spread/butter in my sandwiches. That wasn’t a problem, instead by 12pm I still had a delicious soft sandwich which tasted like it had been made 10 minutes before 🙂

Anyways, enough talk check out my recipe below:

Ingredients

  • 4 slices of gluten-free seeded bread
  • 160 g of mozzarella
  • 4 slices of smoked salmon
  • Two small handful of freshly washed spinach
  • Black pepper, to season

Instructions 

  1. Get two slices of bread, place them side by side and spread/butter one slice.
  2. Wash the fresh spinach, drain and place on the unbuttered slice of bread
  3. Cut the mozzarella into slices and place on spinach, now get the salmon slices and place on the mozzarella and spinach. Sprinkle black pepper on top before covering them with the buttered slice.
  4. Now slice into two and enjoy. Repeat with the other two slices of bread

As you all know, salads are my kryptonite, I’m never too sure what to put inside them. I didn’t grow up eating loads of salad, because I generally tended to avoid them. At home,school or even parties.I would help myself to everything,but the green bowl filed with the vegetables and salad cream. However, part of trying to eat more wholesome meals and being healthier means eating more salads and vegetables.

Plus, now I know how to make salads I enjoy!
