Fresh Tangy Orange Curd

So I made orange curd, ta da!

I’ve done quite a few recipes involving eggs, specifically egg whites and I’m always stuck having to eat the yolk or throw it away. It’s annoying and wasteful so I decided this time around that I was going to look for some alternative recipes involving egg yolk.

I figured if some recipes need egg whites, there must be ones that only need the yolk.

The top two options? Custard and curd.

Custand was my first choice, as I have a small slice of cake that it would have gone perfect with, BUT..I didn’t have the ingredients for custard, so curd won.

Now did I know what I was going to do with the curd? No

Was I worried it was going to be hard? Yeah

However, it turns out making curd is one of the simplest things in the world and it works great for a glaze on cheesecakes and alternative to jam on toast ( orange curd on toast tastes like marmalade). I love it! I made a little bottle of it and it finished so quickly!  I’m really proud of myself for pulling it off, since starting this blog I’ve really impressed myself with the little things I’ve managed to tackle in the kitchen. Like the caramel sauce, I made a few months ago, I thought making salted caramel was going to be so hard…it’s not! Never be scared to experiment in the kitchen, guys. its the best part of being a baker/chef.

So if you have some oranges or lemons lying around give this a go. This recipe works for either fruit. hmm….wonder if it would work with lime. Anyway, if you decide to give it a shot tag me! #girlonthursday, I would love to see how my little recipe works for others.

 

Orange curd 2Check out the recipe below:

Ingredients

  • 3 large oranges
  • 240g of caster sugar
  • 6 medium eggs yolks
  • 150g of butter, chopped and unsalted

Instructions

  1. Squeeze the juice from the oranges and set aside in a small glass/metal bowl
  2. Add the eggs in the bowl with the juice and whisk, once done combine the sugar
  3. Get a small pot, fill it with water and let it boil until it’s simmering. Once done, put the bowl with the mixture on top. Let it sit on the edges of the pot, like how it does when you melt chocolate.
  4. Now add the small cubes of butter into the mixture and stir.
  5. Once melted, continue to stir frequently until thick and creamy
  6. Take off the curd mixture off the heat and leave to cool

Simple or what?
